There are national dishes that are universally appreciated, and paella, from the Spanish gastronomic tradition, is undeniably one of them. Instituto Cervantes Albuquerque, in partnership with the National Hispanic Cultural Center and Pop Fizz, presents a new Spanish cooking class in the series of monthly classes that we have been presenting since 2013. In these classes, students participate in the creative process along with the chef. Join chef Rosario Arellano from Cádiz, Spain, in preparing a delicious menu including:
Appetizer: Revuelto de espárragos (asparagus omelet)
Main course: Seafood and chicken paella (a classic rice-based dish from Valencia)
Dessert: Olive oil “magdalenas” (madeleines)
Drink: One glass of wine provided per person; additional wine may be purchased from Pop Fizz
